DNS Zones
In my DNS zone should I have both of these records or should I delete mail.
mysite.com Mail Exchanger (MX) mf3.spamfiltering.com [10]
mail.mysite.com Address (A) 83.xxx.xxx.xx

Yes you should have both.
This is a SINGLE MX record for the spamfiltering server.
And then an (A) record for mail.yoursite.com.
