email: catchall, anybody, spam, etc.

Some general questions here...

I deleted catchall because I thought it would get rid of spam to guessed addresses, but I still get email through to addresses that "don't exist" at my site. Is there a trick to simply bouncing or trashing them if there isn't an alias?

What is the minimum set of email addresses that you need to keep? (I only deleted catchall and set up a couple of aliases so far).

Last... I'm getting spam to an address that can't be botted from my site (AFAIK, well, it didn't get spammed before). The only place it exists online is as an alias in my control panel. Any thoughts? I know spam is just a hazard we all get but I'd like to know I'm doing everything I can to reduce it.

You could setup the catch-all alias to goto "site_blackhole" (this will stop it from being delivered or remaining on the server.
