Exchange Server

Anybody good and knowledgeable on Exchange Server out there ?
I've picked up a new client this week. One issue I have is that previously they used some Outlook Pop3 configs as well as their default Exchange Server config.
It seems the previous host had a duplicate MX setup to channel mail into a Pop3 mailbox, as well as everything going into the Exchange Server.
So, now they think their email is "broken" as they can't access it with Pop3 as well as Ex.Server. (There is a good reason for that setup, won't bore you).

Anyway, there were 4 email addresses being dropped into one Exchange Server user mailbox. Then 3 of these being accessed additionally by Pop3.
It seems to me that we could separate those addresses out onto separate users on Exchange Server, and then have them into Outlook as 4 separate Exchange Server configs.
Does anyone have any experience of this ?
I really don't want to start monkeying around with Microsoft stuff in front of the client, exposing my limitations.....

Note that all four are being / will be accessed by one Active Directory user (Win Server 2000). Does this have any bearing ?

It ended up they got their Exchange Server computer replaced, so the E/S got completely reconfigured. They're using aliases to route incoming messages.
I set up FreeSMTP which allows a PC to send out emails independent of E/S or a Pop setup.
